Ingredients
3 tablespoons and 1/3 cup olive oil
3 cloves minced garlic
1 cup caramelized onions (I use this recipe)
1 cup split peas
2 1/2 cups vegetable broth
1 bay leaf
1/4 teaspoon ground cumin
Juice of 2 lemons
Zest of 2 lemons
Preparation
In a medium saucepan sauté 3 tablespoons of olive oil with 3 cloves of minced garlic and 1/2 a cup caramelized onions. Cook until the edges of the garlic begin to brown.
Add 1 cup split peas, 2 1/2 cups vegetable broth, 1 bay leaf, and 1/4 teaspoon ground cumin to the pot. Bring the pot to a simmer and then reduce the heat to low and cook for 20-25 minutes. You will know the split peas are done when they are soft when you test them.
Remove the bay leaf and then add the mixture to the bowl of a food processor with the juice and zest of 2 lemons, remaining 1/3 cup of olive oil, and the remaining 1/2 cup of caramelized onions. Process until the mixture is very smooth. Season with salt and pepper to taste.
Enjoy the fava with thick crusty bread as a side or appetizer.
Notes
Yield: ~ 2 cups of Fava
